Wavy Wines started as a friendly conversation between Eliot Kessel and Jude Zasadzki while celebrating Eliot’s daughter’s birthday in 2019. They were drinking natural wines from all over the world trying to fathom how they could start a project that begins to resemble these styles of ‘Vin de Soif’. Easy summer wines were a top priority.
They make wine from organic grapes, using only ambient yeast.
After many conversations about where they should start, they came across an affordable source of Pinot Gris from an organic vineyard in Chico, California. It was pretty set in stone that they were going to make a skin contact/ramato style of wine. Coupled with a little bit of Chardonnay from Scribe Estate Vineyard they were in business.
With finances being tight they decided to take a chance on making a Piquette from the same grapes. The process with which they got there really marked a pivotal moment in Wavy. They will always recycle our grapes, and that will always change with whatever they source for that year.
As with all of our producers, We will be donating part of the proceeds from sales to a non-profit close to our heart. For Wavy wines, we have chosen to donate to the Alberta Council of Women’s shelters. Please check them out.
LS Gris
70% Pinot Gris, 30% Chardonnay
13% ABV
Vinification method: Pinot Gris was harvested from Evina Vineyards in Contra Costa and Chardonnay was harvested from Mason Vineyards in the Redwood Valley, Mendocino. Pinot Gris was left with the whole cluster and macerated for 9 days and the Chardonnay was de-stemmed and saw 10 days of maceration. Free-run juice was drained from tanks and after fermentation was complete both ferments were blended and harmonized in stainless steel until bottling. Bottled unfined, unfiltered and with no added SO2.
Tasting notes: Nectarine, peach, and stonefruits. Mineral-driven, fresh melon notes. Light, and bright, and oh so fun. Pops out of the glass!

Wine Cooler
40% Chardonnay, 40% Sangiovese, 10% Sauvignon Blanc, 10% Muscat
8% ABV
Vinification method: A blend of un-pressed pomace + H20 from our 2022 harvest. After 2 days the wine was drained and gently pressed and rehydrated with still fermenting Chardonnay juice before bottling. Fermentation finished in bottle. Bottled unfined, unfiltered and with no added SO2.
Tasting Notes: Tangy and effervescent. Plumy, fizzy delight.

Super Californian
60% Sangiovese, 20% Zinfandel, 20% Petite Sirah
12% abv
Vinification method: All fruit was gleaned from Vista Luna Vineyards in Lodi, Certified Organic.
Sangiovese and Zinfandel were co-fermented. Whole cluster Sangiovese with a pour-over of direct press Zinfandel for 10 days. Petite Sirah was direct press and fermented separately. After both ferments were complete the juice was blended and harmonized in stainless steel until bottling. Unfined, unfiltered, no additional SO2.
Tasting notes: The red wine for the white wine sippers?! Rich notes of plums and candied black cherries with a touch of tannin for all.

Wavy x Bardos Collaboration
60% Gravenstein & Jonathans Apples, 40% Frontenac
10% ABV
Vinification method: Frontenac was harvested from Jobs Peak, Nevada ~ 6k elevation site on decomposed granite. The fruit was brought in late harvest and went directly to press. During fermentation barrel-aged cider from their friends, Bardos, was poured over the top before. Fermentation finished in bottle. Bottled unfined, unfiltered and with no added SO2.
Tasting notes: Dry with notes of candied strawberries. Delicious.

NRG 2022
80% Chenin Blanc - 15% Muscat - 5% Chardonnay
12% ABV
Vinification method: Maceration for 2 days on their skins before being pressed and fermented in stainless steel tanks. Wine was racked and still-fermenting Chardonnay juice was added before bottling in October 2022. Fermentation finished in-bottle.Bottled unfined, unfiltered and with no added SO2.

Cloud Hidden
80% Vermentino, 20% Greco
12% ABV
Vinification Method: One ton of Vermentino was direct pressed into an amphora, where it aged surly for 6 months. The other one ton of Vermentino was destemmed and fermented on the skins. The skin fermented portion aged in an amphora and neutral barrels for 6 months sur lie. Both direct press and skin fermented portions were racked and blended with barrel aged Greco from 2021 prior to bottling in May 2023. Bottled unfined, unfiltered and with no added SO2.

Sunshine
30% Grenache Blanc, 30% Chardonnay, 25% Sauvignon Blanc, 15% Muscat
11.5% ABV
Vinification Method: Grapes went into open-top stainless-steel tanks into 2 fermentations. One tank with 50% destemmed Grenache Blanc and 50% whole cluster Sauvignon Blanc and the other with 100% destemmed Muscat and Chardonnay. Twice daily punchdowns for cap management. Once fermentations were complete, both tanks were drained of their free run and pomace was rehydrated with water to make piquette. The wine was aged in stainless steel until bottling in January 2023. Bottled unfined, unfiltered and with no added SO2.
