Like many, the Sproll's were drawn to the spirit and beauty of Prince Edward County. The idea came after selling their first business in Canada — a German bakery they started in 1978, making authentic sourdough breads — and being pioneers in the sourdough movement at the time, were not afraid to try something new. They believe that winemaking is a craft requiring a healthy dose of intuition and curiosity as well. They want their wines to be equally ephemeral and express the best their land has to offer. They believe every wine should be surprising, textural and soulful; not predictable. Being true to nature means letting wild yeasts ferment their wines with as little intervention as possible. Each wine should tell the story of site and vintage with unabashed honesty.

Marq’ette
Marquette
11% ABV
Vinification method: Perfect certified organic fruit was picked from Appletop farm. At the vineyard bins an addition of fermenting juice was put into each bin along with carbon dioxide to get carbonic maceration started as early as possible. Bins were transported to the winery and continued to undergo fermentation for 1 week. Pressed and fermented without any additives until dryness. Bottled with a small addition of juice to create bubbles on the palate. Wild ferment. Unfiltered. Zero sulphur added.
Tasting notes: Beautiful, bright red fruit on the palate. Savoury, floral and red licorice aromatics. Crisp acidity brings flavours of black currants and raspberries finishing with a spiced finish

Supersonic X Garneau block collab
Concord
8% ABV
Vinification method: Grown by the Lippsitt family on a 130-year-old farm on heavy clay soils. Hand harvested Concord grapes were pressed on a very long press cycle with lots of rotation to naturally extract juice from these hard-to-press grapes. The wine was fermented naturally to dryness and allowed to settle at a cold temperature to aid in stability. Bottled with an addition of juice to reach a desired pressure of 1.5 bar.
Tasting notes: A very light version of supersonic as this wine was bottled with lower pressure. Bottled into a lighter-weight glass to cut down it's carbon footprint.
Red in colour with high acid and light bubbles. Truly reminds of Welch’s grape juice from our youth. Unmistakably Canadian with a touch of finesse from the winemaking team. Juicy, tart nostalgia!

Red Pet Nat X garneau block collab
23% Baco Noir, 13% Cabernet Franc, 64% Riesling
10.5% ABV
Vinification method: 23% Fermented with carbonic maceration for 8 days and then pressed to tank with fresh pressed Riesling. Cabernet Franc was whole cluster pressed to tank. Fermented for two months at a very cool temperature and racked six times to clarify the ferment. Warmed up just before bottling. Bottled with an addition of 15 ppm SO2 with an aimed pressure of three bar.
Tasting notes: Delightful red fruit on the nose. This Pét Nat showcases beautiful carbonic fruit notes and a bright acidity. Layers of cranberry, orange, currants and strawberries with a hint of trademark TEW funk.

Oh Julius X Garneau Block Collab
8% L’Acadie Blanc, 35% Gewürztraminer, 50% Riesling, 7% Muscat
10.5% ABV
Vinification method: A blend of aromatic white grapes, fermented on skins for on average 5 to 10 days. Pressed, allowed to settle for a few weeks and then bottled unfined, unfiltered and unsettled. 15 ppm SO2.
Tasting notes: Zesty lemon juice with yeasty brioche notes and layers of grapefruit on the nose. The palate has flavours of pomelo with mid-palate weight and a fresh uplifting finish that encourages you to go back for another sip.

Garden Party
Riesling and Cabernet Franc, parsley, sage, rosemary and thyme
17.5% ABV
Vinification method:Trail Estate’s first ever collection of fortified wines! A red, base wine was crafted with premium grapes, aged in barrel, and fortified with wheat based alcohol from Stillus Distillery in Prince Edward County.
Tasting notes: Layers of herbal notes — dominated by sage and rosemary, lift out of the glass. Finishes with a slight herbal bitterness on the finish, akin to dry Vermouth.

Field of Dreams
14% Geisenheim, 8% Gewürztraminer, 23% Riesling, 55% Chardonnay
10% ABV
Vinification method: A blend of fruit from the Trail Estate Vineyard. Harvested according to flavour and balance at different times throughout the fall. Geisenheim was hand destemmed and fermented on skins. Gewurztraminer was fermented whole cluster under a blanket of carbon dioxide. All varieties were pressed together when the Chardonnay was harvested and rested in tank until bottling at the end of October. Bottled unfined and unfiltered with no addition of sulphur.
Tasting notes: A sparkling wine with bright natural acidity characteristic of Prince Edward County. Layers of pear, green apple and lime, backed with yeasty notes. Full bubbles carry this wine forward with a mouthwatering finish. Electric!!!
