Like many, the Sproll's were drawn to the spirit and beauty of Prince Edward County. The idea came after selling their first business in Canada — a German bakery they started in 1978, making authentic sourdough breads — and being pioneers in the sourdough movement at the time, were not afraid to try something new. They believe that winemaking is a craft requiring a healthy dose of intuition and curiosity as well. They want their wines to be equally ephemeral and express the best their land has to offer. They believe every wine should be surprising, textural and soulful; not predictable. Being true to nature means letting wild yeasts ferment their wines with as little intervention as possible. Each wine should tell the story of site and vintage with unabashed honesty.

Neon Candy
Sauvignon Blanc
10.5% ABV
Vinification method: Hand harvested from the Hughes Vineyard at the end of September. This Sauvignon Blanc was pressed whole cluster and put straight to barrel. Older barrels were used to keep the oak influence neutral. Aged for 8 months, racked and bottled with a total sulphur of 40ppm.
Tasting notes: A delicate Sauvignon Blanc made for summer afternoons. A splash of grapefruit, a hint of minerality and a dash of spice. This wine is modest and unassuming with a lush palate.

Supersonic X Garneau block collab 2022
Concord
8% ABV
Vinification method: Grown by the Lippsitt family on a 130-year-old farm on heavy clay soils. Hand harvested Concord grapes were pressed on a very long press cycle with lots of rotation to naturally extract juice from these hard-to-press grapes. The wine was fermented naturally to dryness and allowed to settle at a cold temperature to aid in stability. Bottled with an addition of juice to reach a desired pressure of 1.5 bar.
Tasting notes: A very light version of supersonic as this wine was bottled with lower pressure. Bottled into a lighter-weight glass to cut down it's carbon footprint.
Red in colour with high acid and light bubbles. The unmistakable foxy aromatics run rampant through the wine. Unmistakably Canadian with a touch of finesse from the winemaking team. Juicy, tart nostalgia!

Red Pet Nat X garneau block collab 2021
40% Riesling, 37% Baco Noir and 23% Cabernet Franc
9.5% ABV
Vinification method: Fermented with temperature control and racked 5 times for clarity this wine was bottled 3 months after the 1st grapes were picked. A cool and slow natural fermentation maintained a lot of fruit-forward aromatics. Bottled at an RS of 10 g/L and a Dissolved CO2 of about 2 bar. The aimed pressure in this wine is about 4.5 bar.
Tasting notes: A beautiful and naturally carbonated wine with cherry menthol notes and a hint of rosemary throughout the nose and palate. High acid and light bubbles shortly after bottling (December 2021).
