Sfera wines

From the Alps to the Mediterranean, Sfera collaborates with producers from different areas of Italy to explore their Terroirs and give light to small artisanal productions. They search for vineyards on granite hills, at altitude or near the sea, but also for native grapes that are little known but have great potential.

They are always looking for new collaborations with winemakers who want to experiment with them and bottle something special and different from their classic productions, in small quantities.

They work with producers who treat their land with respect and who aim to preserve the identities of their territories with simple but controlled winemaking. Many producers are certified organic, and some use biodynamic techniques in the vineyard.

The wines are made from spontaneous fermentations, have under (<60mg/l) SO2, are dry wines with low residual sugar and alcohol levels between 12 and 13.5%, and are immensely drinkable.

As with all our producers, we will be donating part of the proceeds from sales to a non-profit close to our heart. For SFERA wines, we have chosen to donate to the GEARS (animal rescue). Please check them out.

95% Nero d’avola, 5% local red grapes
12% ABV
production: 14,000 bottles


Vinification:
Harvested mid-September. Grapes are from 25-30-year-old vines in clay and red sand soils at 200-400 mt above sea level. Co-fermentation of the grapes in stainless steel vats for 10 days at 25° with pumping over twice a day. Elevage in stainless steel for 10 months and then bottle. Sulphur: 30 mg/l total added before bottling



Tasting notes:
Blackberry and raspberry, herbal hints and spicy black pepper on the finish; fresh, medium body- the perfect everyday red wine.

Vinification
Harvested mid-September. Grapes are from ~ 12-year-old vines in clay and limestone soils at 350 meters in elevation. Spontaneous fermentation with pied de cuve and skin contact for 20 days in stainless steel tanks. Elevage for 7 months in a cement tank ( 50%) and in stainless steel (50%). Blending of the tanks at bottling. 30 mg/l added after fermentation, 30 mg/l added at bottling.

Tasting notes:

Light Apricot and almonds, with a bergamot tea hint, clean delicate finish with low tannins.

Vinification
Hand harvested mid-September. Grapes are from 30-year-old vines in clay and limestone soils (with sea fossils) at 200 meters in elevation. Direct press, and fermentation in stainless steel tanks for 14 days. Elevage in stainless steel on its lees for 6 months with weekly batonnàges. Sulphur: 72 mg/l added during the press and at bottling

Tasting notes:

Citrusy, ocean breeze freshness, pronounced mineralilty balanced by a gentle, creamy texture from lees aging - a pretty wonderful every day white wine.

Crotin 1897 - LOT - NB2024
100% Nebbiolo
12.5% ABV

Vinification
Harvested at the end of September. Grapes are from 20-year-old vines in Cacarious soils ( marine sands and Tufo) at 550 meters in elevation. 6- 8 hours on the skins after the first soft pressing; spontaneous fermentation ( with pied de cuve) for 15 days at controlled temperature in stainless steel tanks. Élevage for 6 months in stainless steel with weekly batonnages. 52 mg/l total S02.


Tasting notes:

Rose and violet with little fresh strawberries in the aroma, with a gentle, elegant structure and a mineral long finish.
